A delicious way to get kids to eat their fruit-with just enough chocolate, it feels like a treat! 


Ingredients
1 12 medium
bananas
1 cup
sugar
14 cup
vegetable oil
1
egg
1 tsp
vanilla extract
1 cup
all-purpose flour
1 tsp
baking powder
1 tsp
baking soda
1 tsp
Cinnamon Cinnamon
1 cup
low-fat plain yogurt or low-fat sour cream
14 cup
milk chocolate chips

Preparation
  1. Preheated oven to 375° F (190° C).
  2. Mash bananas with a fork, measuring about 1 12 cups.
  3. Using an electric mixer, beat bananas with sugar, oil, egg and vanilla extract in a large bowl until well mixed.
  4. Whisk flour with baking powder, baking soda and Cinnamon in a large bowl. Pour banana mixture overtop. Using a spoon, gently stir together, then stir in yogurt and chocolate chips.
  5. Spoon batter into a lightly oiled muffin pan and bake in centre of oven for 15-18 minutes until a cake tester inserted in centre of muffin comes out clean. Let stand 2 minutes, then turn out of pan.
Tips

Make ahead and freeze for an easy breakfast or snack and serve with a refreshing glass of cold milk.
