Ingredients


Makes: 4 servings
  • 1 pkg Veggie Burger Mix (Pkg of 2)
  • 1/2 C (125 ml) hot water
  • 3 Tbsp (45 ml) lemon juice
  • 1 C (250 ml) cooked quinoa
  • 1 C (250 ml) grated zucchini
  • 2 Tbsp (30 ml) oil
  • 1 head iceberg lettuce, cored, leaves separated
  • 1/4 C (60 ml) Big Burger Sauce, prepared

Preparation


 
  • In a bowl, combine first 4 ingredients. Let stand 5 minutes.
  • Preheat large Fry Pan or grill pan over medium heat. Add oil. Using a 1-C (250-ml) measure as a guide, scoop batter into pan, making 4 burgers. Lightly press and flatten into shape. Cook until golden brown, about 4–5 minutes per side.
  • Divide half the lettuce leaves on plates; dollop with Big Burger Sauce. Cover with patties and toppings, then remaining lettuce.

Tip


 

Recipe Tip: Make burgers; refrigerate or freeze. Reheat on barbecue for smoky flavour.

Topping Suggestions (optional): sliced tomatoes, pickles, red onion rings, sliced avocado.
