Ingredients
1 can (19 oz/540 ml)
kidney beans, drained and rinsed
1 cup
water
3 tbsp
1 cup
grated low-fat cheddar cheese
4
10" tortilla shells
2 cups
shredded lettuce
1
bell pepper, sliced, optional

Preparation
  1. Blend first 3 ingredients in a food processor.
  2. Place bean mixture in a frying pan over medium-high heat, stirring until heated through.
  3. Fold in cheddar and divide mixture between tortilla shells. Add lettuce and pepper, if desired. Roll up and serve.
