A great way to get children to enjoy cauliflower, and a good source of fibre and potassium.
1 small cauliflower
1 can (10 oz/284 ml) low-sodium tomato soup
3 tbsp low-fat milk
1⁄3 cup grated Cheddar cheese
- Trim cauliflower. In a large pot of salted boiling water, cook whole head until tender crisp, about 8 - 10 minutes.
- While cauliflower is cooking, combine tomato soup, milk, and Vegetable Seasoning in Multipurpose Pot - 8 cup. Stir well. Bring to a gentle simmer over medium heat.
- Remove pot from heat, add cheese and stir well. Return pot to low heat and continue stirring until cheese melts. Season with Sea Salt and Pepper.
- Place cauliflower on large serving plate and pour tomato cheese sauce overtop. Serve immediately.
