Middle Eastern Couscous

A fast side inspired by Middle Eastern sweet and savoury flavour.

Ingredients
1 1⁄2 cupsNourish BrothorVegetable Broth, prepared
1 cup frozen mixed vegetables
2 tbsp raisins
1 tsp Curry Seasoning
2 tspApple Pie Spice
1 cup regular couscous or Israeli couscous
Preparation
- In a Multipurpose Pot, bring broth to a boil.
- Add vegetables, raisins, curry, and Apple Pie Spice. Simmer for 2 minutes.
- Stir in couscous. Remove from heat, cover, and let stand 5 minutes. Fluff with a fork and serve.
