Ingredients


Makes: 1 serving
  • 1/2 C (125 ml) cooked quinoa
  • 4 oz (114 g) cubed, prepared
  • 1/2 C (125 ml) tomatoes, sliced
  • 1/2 C (125 ml) cucumber, cubed
  • 1 C (250 ml) mixed greens
  • 2 Tbsp (30 ml) low-fat feta cheese, cubed
  • 1 Tbsp (15 ml) Balsamic Vinaigrette, prepared
  • Everything Bagel Whole Food Topper, to taste

Preparation


 
  • Place quinoa in a serving bowl.
  • Top with chicken, veggies, greens, and cheese.
  • Drizzle with dressing and top with whole food sprinkle. Serve.

Tip


 

Make it vegetarian: Swap chicken for ¼ C (60 ml) chickpeas and ¾ C (180 ml) black beans.
Make-ahead mason jar salad: Prep in advance and have a salad ready to go! Layer all ingredients starting with the dressing, followed by veggies and protein. Top with greens.
