Ingredients
12 lb (225 g)
boneless, skinless chicken breast
2 cups
frozen mixed vegetables
1 cup
uncooked white rice, rinsed and drained
1 pkg
Thai Coconut Soup Seasoning
1 12 cups prepared
Nourish Broth, warmed
1 tbsp
low-sodium soy sauce

Toppings (optional): hot sauce, sliced green onion, sesame seeds

Preparation
  1. Cut chicken into bite sized pieces and place in Round Steamer. Cover; microwave on medium (50% power) 5 min, or until cooked through.   
  2. Remove steamer from microwave. Stir in veggies, rice, seasoning, broth, and soy sauce. Microwave uncovered on high 15–16 min, or until liquid has absorbed and rice is tender.  
  3. Serve with toppings, if desired. 
Tips

Chicken can be an expensive protein. We’ve used less chicken and suggest adding a hardboiled egg to the finished dish to help stretch your food dollar! Hard boil your eggs on the stovetop, while the dish is in the microwave—easy! 

Perfectly Balance Your Plate

Serve with 1 hard boiled egg and 12 cup steamed veggies.
